Fig-Rosemary Pizza with Apples and Pecans

1 Sami’s gluten-free pizza crust
½ red onion, thinly sliced
2 tbsp. Ariston olive oil, divided
1 Granny Smith apple, thinly sliced*
1/3 cup Sallie’s Greatest Fig Sweet Onion-Rosemary jam
4 oz. crumbled goat cheese (or other soft cheese)
½ cup toasted pecans, chopped 

Preheat oven to 425 degrees F. Place crust on pizza pan or cookie sheet misted lightly with oil. Sauté onions in 1 tablespoon of olive oil on low heat until caramelized (about 15-20 minutes). Remove from pan and reserve. In same pan, sauté apples in remaining olive oil until tender (about 3 minutes). Remove from heat. Brush crust with fig sweet onion jam. Top with apples, caramelized onions, and crumbled goat cheese. Top with toasted pecans and bake for 10-12 minutes. Let cool for 2-3 minutes and serve. .

* Can substitute thinly sliced pears instead of apples if desired.
