Cube Steak and Potatoes

This is a Weight Watchers recipe that’s full on flavor and can easily be made gluten-free!

1 lb. potatoes peeled and chopped
½ tsp. salt
½ tsp pepper
4 tbsp flour (or any gluten-free flour)
1 ½ cups beef broth
1 lb. cube steaks (4 ¼ lb. steaks)
8 oz. mushrooms, sliced

Mix together the beef broth and 2 tablespoons of flour. Dredge steaks in flour and sprinkle with remaining salt and pepper. Spray skillet with cooking spray and place over high heat. Add steaks, searing two minutes per side. Stir in mushrooms and broth mixture, and bring to a boil. Cover and simmer 20-30 minutes until steaks are tender.

While steaks simmer, add potatoes to a medium pan; cover with water and bring to a boil. Cover and simmer 10 minutes or until tender. Drain but reserve ½ cup of liquid. Return potatoes to pan and add ¼ tsp. salt. Mash potatoes with the potato liquid.

When steaks are tender, uncover to let gravy thicken. Serve with mashed potatoes and steamed vegetable of your choice.
