Easy Gazpacho

1 1/2 pounds ripe tomatoes, peeled, seeded and chopped
3 cloves garlic, minced
1 onion, chopped
1 carrot, chopped
1 small cucumber, seeded and diced
1 green bell pepper, seeded and diced
2 tbsp. chopped parsley
2 tbsp. chopped cilantro (optional)
4 tbsp. chopped fresh basil
Juice of 1 large lemon
Salt and pepper to taste
4 cups V-8 juice

Combine all ingredients, and chill several hours before serving to let flavors mix. Adjust seasonings as needed. For a smoother soup, ingredients can be pureed in a blender or food processor. Can be served hot or cold.
