Post-Thanksgiving Pizza

1 Sami’s gluten-free pizza crust
2 tbsp. Ariston olive oil
½ onion, thinly sliced
1 cup fresh mushrooms, sliced
1 clove garlic, minced
8-12 oz. turkey gravy
1 cup mashed potatoes
2 cups cooked turkey, chopped
2 cups shredded raw milk cheddar cheese
2 tbsp. fresh parsley, chopped
1/4 cup fresh or dried cranberries (optional)
Preheat oven to 425 degrees F. Place crust on pizza pan or cookie sheet misted lightly with oil. Saute onions and mushrooms in olive oil until tender (about 5-10 minutes). Add garlic and sauté 2 minutes more. Set aside. Spread gravy over pizza crust, and top with spoonfuls of mashed potatoes. Layer with onion-mushroom mixture, turkey, cheese and parsley. Add cranberries if desired, and bake until cheese is melted but not browned (about 15 minutes). Cool five minutes and serve.
