Roasted Potatoes with Bleu Cheese and Walnuts
1 lb. baby red or white potatoes, halved
1 tbsp. olive oil
¼ tsp. black pepper
½ tsp. course salt
½ cup chopped walnuts, toasted
2 oz. crumbled bleu cheese
2 scallions, thinly sliced
Preheat the oven to 425°F. Coat a baking dish with cooking spray. Add potatoes, and toss with oil, pepper, and salt. Roast for 30-35 minutes until tender and caramelized.
While potatoes cook, crumble bleu cheese and walnuts in a bowl. Set aside. When potatoes have cooked, remove the pan from oven and sprinkle with walnut mixture. Top with scallions and bake for 5 minutes longer.
