Souper Soups

The best soups start with wholesome ingredients and a little imagination. Sometimes all you need is broth, leftover veggies and meats in the fridge, seasonings, and a handful of rice or pasta for a healthy delicious creation. Here are a few tips for taking basic soup to the next level.

  • Sear proteins and roast veggies for 10 minutes to enhance their flavor.
  • Use fresh herbs instead of dry, and add an extra pinch of salt and cracked pepper.
  • Stir in chopped scallions and a squeeze of citrus to brighten the base.
  • Serve yogurt or sour cream with soups to add richness and/or reduce spiciness.
  • Add a few tablespoons of grated Parmesan to thicken broth and add a nutty taste.
